Frank’s Polenta in the Oven
(I usually double this for each meal)
In a Corningware casserole dish with cover:
3 cups water
1 cup Polenta
1 tsp salt
Handful of chopped Italian (flatleaf) parsley
Handful of grated Pecorino Romano
1 Tablespoon chopped garlic
Stir together – no lumps
Cover and bake at 375° for 40 minutes
Uncover, stir in handful parmigiano reggiano
Back into oven, uncovered 10 min, stir
Spoon into bowl, cover with slice of Teleme cheese, cover with sauce
